Join in this pasta-making class in Genoa offers a fantastic opportunity to dive into the culinary traditions of Liguria, a region known for its vibrant flavors and coastal influences.

Set against the backdrop of this picturesque port city, the class typically begins with a friendly introduction to the essential ingredients: high-quality durum wheat flour, fresh eggs, and local olive oil.

Under the guidance of an expert chef, you’ll learn how to make trofie, the region’s iconic twisted pasta, which pairs beautifully with the famous pesto alla Genovese.

The experience is hands-on, allowing you to knead, roll, and shape the dough to perfection, learning techniques passed down through generations of Ligurian cooks.

As you create the pasta, the chef will share insights into the region’s rich food culture, from the influence of the Mediterranean to the way fresh herbs like basil play a key role in Ligurian cooking.

After making your pasta, you’ll enjoy a delicious meal, where you can taste your creations paired with fresh, flavorful sauces. The class is not only about learning to make pasta, but also about immersing yourself in the heart of Genoa’s culinary identity, leaving with a deeper appreciation for Ligurian cuisine.

This experience is a ‘must do’ in Italy, and the beautiful setting and expert instructors at Cooking Italy in Rome make this the place to do your Italian cooking class. I don’t usually enjoy cooking but I totally enjoyed this, and the pasta we made was outstanding.

We took the pasta making class with our two boys aged 10 and 12 and we had such a great time. Luca was a friendly, fun and engaging teacher and our whole group were lovely. We made two types of pasta by hand at a relaxed pace, the boys could easily follow along and had such a good time, which meant we did too.
